This pasta sauce was unlike any other tomato sauce I have ever tried. It’s called Lardiata and it’s a traditional Neapolitan dish. You use 2 different kinds of lard that you make into a paste and that is used instead of olive oil. Then you add the 2 different kinds of tomatoes and slowly cook them. The end result is the most deeply delicious tomato sauce I ever tried in a long time
